What's in your kids lunch? #8

All hail the queen of leftovers!!
**snicker**
It makes meal planning so much easier when I know that I can add leftovers for lunches.  Plus, they loved it last night so I know it will go over well today too.
Sneak eh!

So, what did I pack them?
  • cheater beef stroganoff {extra lean ground beef, cream of mushroom soup & egg noodles}
  • celery & carrots with ranch dressing as a "dip"
  • nectarine slices
  • orange slices

Granted, I might not be able to pack leftovers tomorrow.
We are having a lazy dinner tonight...

What's in your kids lunch?#6


Blame it on lack of sleep but I feel like todays lunch was a bit of a repeat.
Actually, there wasn't a huge difference from yesterdays lunch was there?  You can take a peak at yesterday post and check, I will wait.

Yep, I suck.  6 days in and I have hit a creative road block.
I could blame it on lack of microwave access and the whole nut-free.  I could even say that I have picky kids but that wouldn't be true either.

So what the heck happened

I'm not entirely sure what exactly what happened.  

I plan better when I am hungry so maybe I should make a list or better yet, pack lunches just after dinner.

When do you pack lunches?  Do you have a plan that works or are you a "fly by the seat of your pants" kinda packer?


So, what did I pack them?
  • pumpkin spice mini muffin
  • carrot slices
  • cheese string
  • Lettuce, Ham & Cheese sandwich
  • banana
  • kiwi slices with black berries and raspberries
  • yogurt {which Niffy nunu pointed out that they didn't touch either one of their yogurts so I won't be packing that tomorrow}
Anyways,meal blunders aside.
I have a new toy :0)
I finally picked up adobe photoshop elements 10.
Now I just have to find the right tutorials...
Are any of you digital scrappers?
I need help!!

What's in your kids lunch? #5

Wow, it sure feels like the weekend when by fast!

We stuffed our weekend until it was spilling over the brim.

So much so I am still trying to catch up from my weekend.

The kids celebrated with their friend Viola's 3rd birthday party, I snuck off for some much needed me time and am now sporting a fancy new hair do...
Who said blonds have more fun?  

Between  running around  to dance lessons, grocery shopping and a trip to Ikea our weekend was gobbled up.


Anyway, here's what I packed for the monkeys today!

Remember, I am packing for 2 snacks and a lunch so if you think the proportions are a bit much remember they are at school all day.

I'm not worried at all about leftovers because these guys are growing like weeds and will eat everything

  • Ham & Cheese sandwich on whole wheat bread
  • Marble cheese string
  • 2 mini blueberry muffins {made fresh this morning!}
  • granny smith apple slices
  • banana
  • raspberries & black berries
  • yogurt 

It's wet and rainy out today so I fired up the oven and made another batch of "lunch box muffins"  and to soothe the hankering I have had for "pumpkin spice anything" I tried out a new recipe for:

Honey Oatmeal Pumpkin Muffins  Submitted by: AUBREYJO

Super scrumptious, spicy muffins! I got this off of Allrecipes.com, but omitted a few things, and added a few things to make it lower fat & calories, based on one of the reviewers who said they used less sugar and replaced the oil with applesauce. 
  Makes 12 Muffins.
Number of Servings: 12

Ingredients


    # 1/2 c honey
    # 1/4 cup applesauce, unsweetened
    # 2 eggs
    # 1 1/2 cups pureed (canned) pumpkin or winter squash
    # 1/4 c skim milk
    # 1 cup all-purpose whole wheat flour
    1/2 c Old Fashioned oatmeal
    # 1 teaspoons baking powder
    # 1/2 teaspoon baking soda
    # 1/4 teaspoon ground cloves
    # 1 teaspoon ground cinnamon
    # 1/2 teaspoon pumpkin spice


Directions

In a large mixing bowl, beat honey, applesauce, eggs, pumpkin and water. Combine flour, baking powder, soda, spices and salt. Add to pumpkin mixture; blend well. Fold in raisins. Spoon into greased muffin tins, filling 3/4 full. Bake at 400 degrees F for 15 minutes.

I know I haven't posted a menu in awhile but I assure you we haven't been surviving on cream of ketchup soup or dashing to nearest drive thru. 

This week we are having I have grocery shopped for & planned:
* roasted chicken classic roasted vegetables
* beef stroganoff
* autumn soup and sandwiches 
cottage cheese pancakes with fruit salad

Dang, times up!  Nap time is over and the chase to get homework done in a timely manner has begun.

What's in your kids lunch #3



I need a to come up with a better plan.
Or this is going to get old fast! Three days in and I was struggling. Well, sort of.
Asking anyone at 7:30a.m. what they want for lunch you're not going to get the best answers.
Our conversation went a little like this:

me: "What do you want for lunch"

Giggles: "I want to pack it, let me pack it"

Me: " No, eat your breakfast, what do you want me to put in your lunch?"

Giggles: "I want one of those round chocolate thingies and that's it."

Me: "no, you can't have a wagon wheel and only a wagon wheel for lunch"

Giggles: "Fine..I don't know what I want"

**sigh** Oh so helpful!

So what did I pack?
  • Orange slices with blueberries
  • Marble cheese cubes
  • Apple crumble granola bar
  • raspberry jam sandwich on whole wheat bread
  • nectarines
  • strawberry yogurt {they want us to become more litter-less}
  • raisins {but only in Mr.D's lunch as giggles hates raisins}
In the end it didn't really matter what she wanted or what I packed. So,what did she actually eat?
  •  orange jello & a bowl of chicken noodle soup.
We were waiting to catch the bus to school and she told me she wasn't feeling well.  The next thing I knew she was getting sick and I got to spend the next 30 minutes scrubbing out my mini van.

Guess who's not at school.....  **sigh**

I'm going to do some baking today and replenish my stock of mini muffins and I am going to come up with a list for the rest of this week.  We need more than just sandwiches...
