Menu week 2 #realfood

Back from another trip to the grocery store.
I wish I could say it was getting easier but now that I am actually reading the labels it's getting much more challenging.

I don't know if I can blame ignorance on my part or just blindly accepting that manufacturers would be more honest with the ingredients they are using.
{Not really sure exactly where I came up with that idea?}
For example,Did you know that there is icing sugar in shredded sweetened coconut?
Eww. I thought it already was sweetened.

There is no way I was going to be using that in the granola.
Speaking of which, I am baking a batch now.
The aroma is amazing!!
Can't wait to try some tomorrow morning.
Which reminds me.
Remember how stumped I was over breakfast ideas.
I found this:

Not going to follow it exactly but at least I have an idea if I am stumped again.
Tomorrow I am thinking greek yogurt with granola and fresh fruit.
Sounds yummy {or maybe I am just really hungry}

So, with school winding down and a mystery trip planned for later on this week.
I'm looking at quite a different menu so, to cut costs and to make the most out of the time we are here {Big daddy is flying to "iraq" on Friday morning for our Wedding Anniversary} we are reusing some choices from last week that we didn't use and tweeking some that the kids really enjoyed.
Oh! We are also trying a new food too:
 Menu Week#2
Tacos &  crenshaw melons
Vegetarian chili & salad {we will be adding the left over taco meat into the chili as my hubby loves it}
chicken nuggets with cobb salad
Pasta Roll ups with Turkey and Spinach
Mahi Mahi with Pineapple Red Peppers
